COMPLETE RECIPE

Ingredients & Instructions

Steel-cut oats, split yellow mung beans, oat milk, maple syrup and sea salt in small bowls on a wooden board

Ingredients

Serves 2
  • 80 g steel-cut oats
  • 40 g split yellow mung beans (mung dal), rinsed
  • 600 ml water
  • 120 ml unsweetened plant milk (e.g. oat milk)
  • ¼ tsp fine sea salt
  • 2 tsp pure maple syrup (1 tsp per bowl)
  • 20–30 g crunchy gluten-free, nut-free granola (10–15 g per bowl)

HOW TO MAKE IT

Method — All Instructions

01

Rinse mung beans. Rinse mung beans well until the water is clear.

02

Cook mung beans. Combine mung beans with 400 ml water. Bring to a boil, reduce to a gentle simmer, cover partially and cook for 10 minutes.

03

Add oats. Add steel-cut oats, remaining 200 ml water and salt. Simmer gently for 20–25 minutes, stirring periodically, until the oats and mung beans are very tender.

04

Make it creamy. Add plant milk and cook for another 5–8 minutes, stirring frequently, until thick and creamy.

05

Rest. Remove from heat, cover and let stand for 3–5 minutes to finish absorbing.

06

Serve. Divide between two bowls. Drizzle each with 1 teaspoon maple syrup and top with 10–15 g granola just before serving.

Serving idea: Enjoy warm as a nourishing breakfast, or with fresh fruit or a sprinkle of cinnamon.
