COMPLETE RECIPE

Ingredients & Instructions

Parsley, flaky salt and olive oil in small bowls beside a lemon and two eggs on a wooden board

Ingredients

Serves 1
  • 2 large eggs
  • 2 tsp extra virgin olive oil
  • ⅛ tsp dried parsley
  • Finely grated zest of ⅛ lemon
  • Small pinch flaky sea salt
  • Ice, for cooling

HOW TO MAKE IT

Method — All Instructions

01

Mix the olive oil and dried parsley in a small bowl. Let stand for 5–10 minutes.

02

Bring enough water to a steady boil to cover the eggs by 2–3 cm.

03

Gently lower in the eggs and cook 6½ minutes for a softly thickened, creamy yolk.

04

Transfer eggs to ice water and cool for 5–8 minutes.

05

Crack all over and peel carefully, starting at the wider end if possible.

06

Spoon a little parsley oil onto the plate, halve the eggs, arrange cut-side up, then
finish with remaining oil, lemon zest, and flaky sea salt.

Serving idea: Enjoy on its own or with toasted gluten-free bread, roasted potatoes,
or a simple green salad.
